Mercury in your Meal - or Authentic Food?

Authentic.

A word both enticing and assuring.

When a product or person is “Authentic”, we view them as "real".  Something we can trust or made of ingredients that are true.  

When it comes to food, this is evident in the texture, aroma, and remarkable way in which flavors are revealed to us.  Sadly, if we've been conditioned to foods with preservatives like high fructose corn syrup and trans fats, we may never experience the authentic nature of food.  

This dilemma gives rise to our philosophy of thoughtful menu design, what I propose through the name of my book & workshop, Authentic Nutrition - Précision Cuisine.™

During my recent visit to Europe for my Grandmother's 90th birthday, the difference was shocking.  French Brie with flavors so rich it has ruined the American homogenized, bland as plastic version forever.  

German Grain Breads with real grains throughout the bread bursting with flavor, not just sprinkled on top of the loaf for little more than looks.

Even the coffee is roasted in a manner that there is, as the waiter at a sidewalk cafe described to me, a "natural" foam of coffee goodness swirling at the top when poured into a cup.  Authentic indeed.

Food so unique you found yourself truly satisfied.

And regarding those two demons Trans fats, and high fructose corn syrup; why add both of these to our foods when they rob us of an "authentic" flavor?  

A satisfying meal?  No, but rather a cheap source of "flavor" and preservative.  Why do you think those packages of plastic food in the vending machine are "fresh" for so long?  We pay a heavy price for both, making our meals empty and thus causing us to crave more and more...).

Add to this a study published in the nonprofit Institute for Agriculture and Trade Policy (IATP) showing "detectible levels of mercury in 17 out of 55 products containing HFCS".  The mercury is used in the processing of the syrup in major plants in the United States and other parts of the world.  Although some plants are phasing this procedure out, it is still a reason for concern.

If we leave behind the chemical preservatives, and start producing food that is authentic, it won't last as long on the shelf, but it will satisfy so much more.  I'd rather make another trip or two to the market during the week for my authentic meal, which leaves me satisfied, and not craving more.  We'll make better "menu" choices whether in a restaurant, or preparing a meal (with précision) at home.
